What's for Breakfast? Here's a great high Protein Start to Your Day
Why is eating a healthy breakfast so hard? The fact is that most fast breakfast foods are pretty healthy. Whole grain cereal, yogurt or protein shakes take only minutes to throw together and can start your day on the right track. The one complaint is that they’re cold. Good for warmer days, but with the chilly mornings creeping in, nothing can beat a warm breakfast.
Try my new favorite…Egg Cups! These protein and nutrient rich, 50 calorie “muffins” can be made in large batches and frozen for a quick “heat and eat” breakfast or anytime snack that satisfies not only your tastebuds, but many of your bodies nutritional needs. I fill mine with peppers and mushrooms, but any veggies you love will do. Add in a 1/4 cup of nutritional yeast for some extra protein and some red pepper flakes if you like it spicy! Delicious by themselves, on toast or even chopped in a salad…hope you enjoy these versatile egg cups as much as I do!
Egg Cups
2 cups chopped peppers
1 cup chopped sweet onion
1 cup mushroom
4 eggs
4 egg whites
1 tbsp garlic powder
salt/pepper to taste
1/4 cup nutritional yeast (optional)
Saute veggies in nonstick pan until tender
Beat eggs with whisk
Add cooled veggies, garlic, salt and pepper (nutritional yeast)
Pour 1/4 cup mixture into muffin cups sprayed with oil.
Bake at 350 for 15-20 minutes (eggs should be firm to touch)
Cool slightly, remove from cups enjoy immediately or freeze.
*any veggies can be used for variety
